What is Low-Carb Meatza

Meatza is a play on words to describe a “pizza” with a meat crust. Instead of making a pizza crust with dough, you instead roll ground meat into a crust and bake it until it’s crisp.

Yummy right?

The end result is a thin crust pizza that is low-carb, keto-friendly, carnivore friendly and both gluten-free and sugar-free. It only takes about 30 minutes to make and is quite filling since it is high in protein.

To make your meatza you will want to mix your ground meat with your seasoning and an egg. The egg will help your meat stick together much like meatloaf.

Once the meat is mixed together roll it into a ball and place it in between two long sheets of parchment paper. Use a rolling pin to roll the meat into a thin rectangle about the size of a cookie sheet. It will get easier to roll the thinner it gets.

Next, use the parchment paper to place the meat on a large baking pan to cook.

The top layer of parchment paper can be removed, but you will want to leave the bottom layer of paper on so that the crust doesn’t stick to the pan.

Next, you are ready to bake your crust.

Baking Your Keto Meatza

Heat your over to 250C/450F. When your oven is hot, bake the meat crust for 15-20 minutes or until the crust starts looking crispy.

Then remove the crust and drain any liquid that was released while cooking. You will want to carefully flip the crust over using either a spatula or another sheet of parchment paper. Bake the crust again for another 5-10 minutes to crisp the other side.

When the crust is done cooking remove the crust from the oven, but leave it on so that you can bake the topping onto the crust next.

You’ll notice that the size of your crust will shrink to half the size while it cooks, but don’t worry 1-2 slices of meatza it very filling.

Topping Suggestions for Your Keto Pizza Base

Now that your crust is done it is time to add sauce, cheese, and toppings to your pizza. I usually use plain sugar-free tomato sauce and mozzarella cheese on my pizza to keep it simple before adding the toppings.

Since the crust is already made out of meat I usually don’t add additional meat toppings to my but feel free to add whatever toppings you want. My kids love adding crumbled bacon to their pizza, while I prefer sliced vegetables like peppers and onions.

Once you’ve added your toppings, bake the pizza again for a few minutes to melt the cheese and warm up your toppings.

If you want to use fresh herbs on your pizza as I did (I used basil) I recommend adding them last after the pizza has been baked again to melt the cheese. If you add your herbs before baking again your fresh herbs will lose their lovely green color.

Finally, cut your meatza in squares or triangles and serve. The pizza is filling so 1-2 slices served with a side salad or roasted vegetables like asparagus is plenty for a meal.

Meatza is a great quick low-carb keto-friendly meal you will love.

After you’ve made it once you might decide to invite your family to help you make it. The crust can be cut into individual pizzas for your family to customize. Enjoy!

Ingredients

Toppings

  • 5-6 tbsp tomato paste (optional)
  • 1 cup shredded mozzarella cheese (optional)
  • sliced red bell pepper (optional)
  • sliced red onion (optional)
  • fresh basil (optional)

Instructions

  • Preheat the over to 260C/450F.

  • In a large bowl mix together all the ingredients for the meatza crust. Form the meat into a ball and place in the center of two long pieces of parchment paper. Use a rolling pin to roll the dough into a thin rectangle about the size of your cookie/baking sheet. (The meat will shrink as it cooks so your pizza will not remain that size.)Use baking/parchment paper to move the meat to your cookie sheet. Remove the top layer of baking/parchment paper, but leave the bottom layer of paper on so that the meat doesn’t stick to the pan.
  • Bake the meat crust for 15-20 minutes or until the meat starts getting crispy. Remove the crust from the oven, drain any liquid then turn the crust over and bake for another 5-10 minutes so that the other side gets crisp too.

  • Next add your tomato paste/sauce, cheese, and toppings to the pizza and bake for a few more minutes until the cheese is melted. If you are using fresh herbs wait to add the fresh herbs until after you’ve baked the toppings. The herbs will wilt in the oven.

  • Finally remove the meatza from the oven. Add your fresh herbs, cut, and serve the pizza with a side salad or roasted vegetables.
